Ingredients
  

  • 2 tbsp Olive Oil extra virgin
  • 1 tbsp Leeks
  • 1 tbsp Garlic
  • 1 tsp Salt
  • 1 tsp Pepper Cracker
  • ¼ tbsp Rosemary
  • ¼ tbsp` Thyme
  • 2 No Bay Leaf
  • 1 tbsp Celery Diced
  • 4 cup Vegetable Stock
  • 2 tbsp Asparagus Diced
  • 2 tbsp Green Peas Boiled
  • ¼ Cup Brocolli
  • 2 tbsp Green Beans Diced
  • ¼ Cup Spinach
  • ¼ Cup Parsley
  • ¼ Cup Mint
  • 1 tbsp Lemon Juice

Instructions
 

  • Heat Olive Oil in a Stockpot Over Medium Heat.
  • Add leeks, garlic and cook for a while. Add bay leaf, celery cook for a little while and then add vegetable stock. Boil on low fire.
  • Add asparagus, zucchini, green peas, broccoli,green beans and spinach.
  • Put salt, cracked pepper, rosemary and thyme. Stir to combine.
  • Cover the Lid and boil on Low Flame.

Now to Make Green Puree

  • Add parsley, mint, lemon juice, olive oil to the blender and make the fine paste.
  • Season it with salt and cracked pepper.
  • Add 1 Tbsp of Puree to the Soup.
  • It Should be Served Hot.
