2 tbsp Olive Oil extra virgin 1 tbsp Leeks 1 tbsp Garlic 1 tsp Salt 1 tsp Pepper Cracker ¼ tbsp Rosemary ¼ tbsp` Thyme 2 No Bay Leaf 1 tbsp Celery Diced 4 cup Vegetable Stock 2 tbsp Asparagus Diced 2 tbsp Green Peas Boiled ¼ Cup Brocolli 2 tbsp Green Beans Diced ¼ Cup Spinach ¼ Cup Parsley ¼ Cup Mint 1 tbsp Lemon Juice
Heat Olive Oil in a Stockpot Over Medium Heat.
Add leeks, garlic and cook for a while. Add bay leaf, celery cook for a little while and then add vegetable stock. Boil on low fire.
Add asparagus, zucchini, green peas, broccoli,green beans and spinach.
Put salt, cracked pepper, rosemary and thyme. Stir to combine.
Cover the Lid and boil on Low Flame.
Now to Make Green Puree Add parsley, mint, lemon juice, olive oil to the blender and make the fine paste.
Season it with salt and cracked pepper.
Add 1 Tbsp of Puree to the Soup.
It Should be Served Hot.
