Equipment
- Stockpot
- Pan
Ingredients
- 2 tbsp Olive Oil extra virgin
- 1 tbsp Leeks
- 1 tbsp Garlic
- 1 tsp Salt
- 1 tsp Pepper Cracker
- ¼ tbsp Rosemary
- ¼ tbsp` Thyme
- 2 No Bay Leaf
- 1 tbsp Celery Diced
- 4 cup Vegetable Stock
- 2 tbsp Asparagus Diced
- 2 tbsp Green Peas Boiled
- ¼ Cup Brocolli
- 2 tbsp Green Beans Diced
- ¼ Cup Spinach
- ¼ Cup Parsley
- ¼ Cup Mint
- 1 tbsp Lemon Juice
Instructions
- Heat Olive Oil in a Stockpot Over Medium Heat.
- Add leeks, garlic and cook for a while. Add bay leaf, celery cook for a little while and then add vegetable stock. Boil on low fire.
- Add asparagus, zucchini, green peas, broccoli,green beans and spinach.
- Put salt, cracked pepper, rosemary and thyme. Stir to combine.
- Cover the Lid and boil on Low Flame.
Now to Make Green Puree
- Add parsley, mint, lemon juice, olive oil to the blender and make the fine paste.
- Season it with salt and cracked pepper.
- Add 1 Tbsp of Puree to the Soup.
- It Should be Served Hot.
